For this recipe we need peeled and deveined shrimp. I like to also use a blend of seasoned flavor and corn starch. The corn starch helps ensure the shrimp stay crispy and hold up to our thick sauce.
Speaking of sauce - for my Bang Bang Sauce, I like to use ½ cup mayo, ¼ cup sriracha, and ¼ cup sweet chili sauce (Mae ploy is my favorite brand) - 2 tsps of soy sauce and an optional touch of honey for balance and boom.. or should I say bang? There’s your sauce.
Add a little heavy cream and eggs to your shrimp (or buttermilk) plus a pinch of salt and pepper.
Toss the shrimp in your seasoned flour and corn starch mixture and place on a plate or foil lined baking sheet while your oil hits 350 degrees.
Once the oil reaches 350, drop the shrimp and fry for about 3 minutes or until golden brown and crispy (145 degrees internal temp).
Toss the shrimp in your bang bang sauce - garnish with chives and sesame seeds and enjoy.
