There’s something inherently comforting about the aroma of beef simmering in savory spices, filling your kitchen with a tantalizing scent that promises a delicious meal ahead. Today, I’m thrilled to share with you my favorite beef tips recipe—a dish that perfectly balances simplicity with depth of flavor, guaranteed to leave everyone at your table craving seconds.
Begin by prepping your chuck roast - ensure that the beef is cut into uniform, bite-sized pieces.
Next, prep your mirepoix (carrots, celery, and onion).

Optionally, you can marinate your beef for anywhere from 1-24 hours.
Today we are keeping it simple with olive oil, Italian herb paste, garlic paste, AP seasoning, and worst word in the world sauce - aka Worcestershire.
Searing the Beef:
Heat olive oil in a large skillet over medium-high heat.
Once hot, add the beef pieces in batches, making sure not to overcrowd the pan.
Sear the beef on all sides until browned, then remove from the skillet and set aside.
Sautéing Aromatics:
In the same skillet, add the chopped onion and minced garlic.
Sauté until softened and fragrant, about 2-3 minutes.
Next, add in your beef stock and bring to a simmer.
Add the beef and mix to combine.
Simmering:
Bring the mixture to a gentle simmer, then reduce the heat to low.
Allow the beef tips to simmer in the flavorful sauce for about 45-60 minutes, or until the beef is tender and cooked to your liking. This slow simmer allows the flavors to meld together beautifully.
Optional Thickening:
Optional Thickening: If you prefer a thicker sauce, you can create a slurry by mixing 2 tablespoons of all-purpose flour with a small amount of cold water until smooth.
Stir this mixture into the skillet during the last few minutes of cooking, then simmer until the sauce has thickened to your desired consistency.
Seasoning and Serving:
Taste the sauce and adjust the seasoning with salt and black pepper as needed.
Once satisfied with the flavor, remove the skillet from the heat.
Serve the beef tips hot, garnished with fresh parsley if desired, alongside your favorite sides such as mashed potatoes, rice, or crusty bread to soak up that delicious sauce.
