Instructions
In a large bowl, combine the cooked chicken, finely diced onion, softened cream cheese, buffalo sauce, ranch dressing, mozzarella cheese, and blue cheese if using. Mix until fully combined and creamy, then season with salt and black pepper to taste.
Warm the tortillas briefly so they’re flexible and easy to roll. Spoon about 2–3 tablespoons of filling onto the lower third of each tortilla and roll tightly.
Place the taquitos seam-side down on a parchment-lined baking sheet or in an air fryer basket. Lightly spray the tops with neutral oil spray.
Bake at 425°F for 18–22 minutes, flipping once halfway through, until golden brown and crispy, or air fry at 400°F for 8–10 minutes, flipping once, until evenly crisp.
