Ingredients

lb
chicken thighs or breasts
diced

tablespoon
butter
1
small onion
diced

–3 tablespoon garlic
minced

cups
chicken broth

cups
heavy cream
1
cup
whole milk
1½
cups
short pasta
cavatappi or similar
2
cups
freshly grated parmesan cheese
Cajun seasoning
salt, and pepper to taste
Optional: smoked sausage
spinach, parsley
Instructions
Season and sear chicken in butter until cooked through; remove and set aside.
Sauté onion and garlic in the same pot until fragrant.
Make a light roux, then whisk in broth, cream, and milk until smooth.
Add pasta and simmer until al dente. Stir in cheese and return chicken to finish.
Notes
Add sausage for extra Cajun depth
Reheat gently and thin with broth if needed
