Instructions
Step 1: Prep the Steak
Cut 1 lb filet mignon into bite-sized cubes.
Season generously with salt, black pepper, and garlic butter herb seasoning.
Set aside.
Step 2: Blanch the Asparagus
Bring a small pot of salted water to a boil.
Toss in the asparagus pieces for 2-3 minutes until tender but still bright green.
Drain and place in ice water to stop the cooking.
Set aside.
Step 3: Sear the Steak Bites
Heat 2 tablespoon avocado oil in a large skillet over medium-high heat.
Sear the steak bites for 1-2 minutes per side until browned but not overcooked.
Remove and set aside.
Step 4: Build the Garlic Butter Sauce
In the same skillet, add 3 tablespoon butter, onions, mushrooms, garlic, and parsley.
Sauté until the onions and mushrooms soften, releasing their flavor into the butter.
Step 5: Add Seasonings and Broth
Stir in 1 teaspoon chicken bouillon powder and pour in ½ cup beef broth.
Let it simmer for 2-3 minutes until slightly thickened.
Step 6: Bring It All Together
Return the steak bites and asparagus to the skillet, tossing them in the garlic butter sauce until coated and heated through.
Step 7: Serve & Enjoy
Plate over rice, mashed potatoes, or serve as is with a side of crusty bread to soak up that garlic butter goodness.
