Instructions
Add the shredded rotisserie chicken to a large mixing bowl.
Dice the green bell pepper, red bell pepper, and jalapeño finely. Chop the cilantro and cut the corn kernels from the cob if using fresh corn.
Smaller pieces give the salad a better deli-style texture.
Remove jalapeño seeds for mild heat or keep them for a spicier version.
Add the diced vegetables, cilantro, and corn to the bowl with the chicken.
Stir in the drained black beans and mix gently to distribute the ingredients.
In a separate bowl combine the mayonnaise, sour cream, lime juice, smoked paprika, cumin, all-purpose seasoning, salt, and black pepper.
Whisk the dressing until smooth and creamy.
Pour the dressing over the chicken mixture and gently fold everything together until evenly coated.
Taste and adjust seasoning if needed.
Refrigerate the chicken salad for at least 30 minutes before serving to allow the flavors to develop.
Chicken salad always tastes better after chilling.
Notes
Rotisserie chicken saves time and adds great flavor.
Remove jalapeño seeds for a milder salad.
This salad tastes even better after resting in the refrigerator.
