It’s creamy, cheesy, and full of savory goodness. Whether you’re tailgating, hosting a game night, or just craving a delicious snack, this dip is guaranteed to be a hit.
First things first, let’s get our ingredients prepped and measured. Shred your cheese, dice your onions, etc.
Today we are using yellow and green onions. Give them a rough dice and set them aside.
You can feel free to use the cheese of your choice but today we are going with Colby Jack, Cheddar, and Mozzarella.
Prep the Chicken and Bacon
Start by shredding the rotisserie chicken.
You’ll need about 3-4 cups of chicken, depending on the size of the bird. Just pull off the skin, discard any bones, and shred the meat into bite-sized pieces. This is a perfect use for leftover rotisserie chicken!
Next, cook your bacon until it’s crispy. You can do this in a large skillet or bake it in the oven at 400°F (200°C) for about 20 minutes on a rack to get it nice and crispy.
Once done, chop it into small pieces. Set the bacon aside to cool.
Right into the bacon fat, add your onions, garlic, and toss in the chicken.
Mix the Creamy Base
In a large mixing bowl, combine the softened cream cheese and sour cream.
Use a hand mixer or a sturdy spoon to blend them together until smooth and creamy. You want this base to be light and fluffy so the dip will be rich and easy to scoop.
Add in the ranch seasoning, buttery garlic pepper seasoning, and your AP seasoning.
Stir well to incorporate all the seasonings evenly into the creamy mixture.
Transfer and Bake
Once everything is combined, transfer the dip mixture into a greased baking dish (8x8 or a 9-inch pie dish works well).
Use a spatula to smooth out the top.
At this point, you can bake the dip right away or refrigerate it for a few hours (or overnight) to let the flavors meld together.
If baking right away, pop the dish into a preheated 350°F (175°C) oven for 20-25 minutes, or until the top is golden and bubbly.
Prepare the Baguette Dippers
While the dip is baking, slice your baguette into 1-inch thick pieces.
Arrange them on a baking sheet and lightly brush them with butter.
Sprinkle the buttery garlic pepper seasoning over the top and bake them at 350°F (175°C) for about 8-10 minutes or until they’re golden brown and crispy.
Coat the bread in the seasoned melted butter and bake until crispy
Garnish and Serve
Once your dip is bubbly and golden, remove it from the oven and let it cool slightly before serving.
Garnish with chopped green onions for a fresh, bright pop of color and flavor.
