You can feel free to use the cheese of your choice but today we are going with Colby Jack, Cheddar, and Mozzarella.

Prep the Chicken and Bacon

Start by shredding the rotisserie chicken. You’ll need about 3-4 cups of chicken, depending on the size of the bird. Just pull off the skin, discard any bones, and shred the meat into bite-sized pieces. This is a perfect use for leftover rotisserie chicken!

Next, cook your bacon until it’s crispy. You can do this in a large skillet or bake it in the oven at 400°F (200°C) for about 20 minutes on a rack to get it nice and crispy. Once done, chop it into small pieces. Set the bacon aside to cool.

Right into the bacon fat, add your onions, your garlic, and toss in the chicken.

Mix the Creamy Base

In a large mixing bowl, combine the softened cream cheese and sour cream. Use a hand mixer or a sturdy spoon to blend them until smooth and creamy. You want this base to be light and fluffy so the dip will be rich and easy to scoop.

Add in the ranch seasoning, buttery garlic pepper seasoning, and your AP seasoning. Stir well to incorporate all the seasonings evenly into the creamy mixture.\
