Garlic Parmesan wings are believed to have originated from the classic wing recipes popularized in Buffalo, New York. While Buffalo wings, created in the 1960s at Frank and Teressa Bellissimo’s Anchor Bar, are often the most recognized style, the Garlic Parmesan variation likely emerged as a creative twist over the years.

Restaurants and sports bars began experimenting with different flavors and sauces, leading to the popularization of Garlic Parmesan wings in the 1980s and 1990s. The combination of garlic and Parmesan adds a rich, savory flavor that quickly gained a following, making it a staple on many wing menus today. However, pinpointing a single originator is challenging, as it likely developed organically across various establishments.

For the purposes of this recipe, I prefer to use freshly minced garlic. You can try it with garlic paste and/or the stuff In the jar – but fresh is best!

The only other ingredient you need to dice is the parsley. I would not recommend using the dried stuff in the jar – fresh is best again here too!

Prepare the Wings

Start by rinsing the chicken wings and patting them dry with paper towels. This step is crucial for achieving that perfect crispy texture. In a large bowl, season the wings generously with salt, pepper, garlic powder, onion powder, cayenne pepper, and red pepper flakes. You can adjust the spices according to your heat preference.

Coat with Corn Starch

Sprinkle the corn starch over the seasoned wings and toss well to ensure they’re evenly coated. The corn starch will help create an extra crispy crust when frying!

Fry the Wings

Heat oil in a deep fryer or a large pot over medium-high heat. You’ll want enough oil to submerge the wings. Once the oil reaches about 350°F (175°C), carefully add the wings in batches, being cautious not to overcrowd the pot. Fry for about 8-10 minutes, or until they’re golden brown and crispy. Use a slotted spoon to transfer the wings to a plate lined with paper towels to drain excess oil.

Once your wings are golden brown and beautiful, and 165 degrees internal temp – remove from the oil and place on a wire rack to drain.
