• First things first, as always, let’s get our ingredients measured out and ready.

Boil the Eggs:

• Place the eggs in a pot and cover them with cold water.
• Bring the water to a boil, then cover the pot and remove it from heat.
• Let it sit for about 10-12 minutes.
• Once done, transfer the eggs to an ice bath to cool completely.

Peel and Halve:

• Once the eggs are cool, peel them carefully.
• Cut each egg in half lengthwise and remove the yolks, placing them in a mixing bowl.

Make the Filling:

• To the bowl with the yolks, add mayonnaise, Dijon mustard, white vinegar, paprika, garlic powder, salt, and pepper.
• Mash everything together until smooth and creamy.

Fry the Eggs:

• First, we need to dip the egg white into our seasoned flour.
• Next, they go into the egg wash - and finally, into the bread crumbs.
• Repeat this process until all eggs are coated evenly.
• Heat your oil to 350 degrees.
• The eggs only take about 2-3 minutes to fry.
• Drain on a paper towel lined sheet pan with a wire rack.
• Next, use some of the filling to hold the eggs in place and then pipe the filling into the empty fried eggs.
• Top with jumbo lump crab, old bay, and chives.
