This cheesy croissant casserole tastes like your favorite deli sandwich baked into a creamy, indulgent dish. Buttery croissants, smoky ham, and gooey cheese make it perfect for a holiday brunch or meal prep.
Preheat the oven to 350°F. Cut 6 croissants into bite-sized pieces.
Whisk 8 eggs with 2 ½ cups milk (or half & half), 1 tablespoon Dijon mustard, 1 teaspoon garlic powder, salt, and pepper.
Layer the dish: Place croissant pieces in the bottom of a greased 9x13 casserole dish. Add 2 cups diced ham, 2 cups Swiss cheese, and 1 cup cheddar cheese.
Pour the egg mixture evenly over the croissants, pressing lightly so they soak it up.
Optional: Add sautéed spinach or caramelized onions before baking for extra flavor.
Bake uncovered for 40–45 minutes, until golden and set in the center.
