So Good You’ll Never Cook Eggs the Same Way Again

Breakfast casseroles are my favorite way to make mornings easier and more delicious. They’re hearty, comforting, and perfect when you need to feed a crowd without standing in the kitchen for hours.

Whether you’re meal prepping for busy weekdays, hosting holiday brunch, or just want to treat your family, these casseroles are always a hit.

Today, I’m sharing three of my best breakfast casseroles:

  1. Biscuits & Gravy Casserole – classic Southern comfort.
  2. Ham & Cheese Croissant Bake – buttery, cheesy, and savory.
  3. Sweet French Toast Casserole – cozy, sweet, and made with Hawaiian rolls.

Each one is easy to prepare, feeds 10–12 people, and brings something unique to the table.

Biscuits and Gravy Casserole

This is the ultimate Southern breakfast casserole—fluffy biscuits baked with creamy sausage gravy and topped with eggs and cheddar cheese. It’s cozy, filling, and always the first dish gone at brunch.

Biscuits and Gravy Casserole Ingredients

MR. MAKE IT HAPPEN

All-Purpose Seasoning

  • 1 lb breakfast sausage (pork, spicy or mild)
  • 1 can refrigerated biscuits (8 count, cut into quarters)
  • ¼ cup flour
  • 3 cups whole milk
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp crushed red pepper (optional)
  • 1 tsp black pepper
  • Salt to taste
  • 6 large eggs
  • 1 cup shredded cheddar cheese

Step-by-Step Biscuit and Gravy Casserole Instructions

  • Preheat the oven to 375°F and cut 1 can of refrigerated biscuits into quarters.
  • Cook the sausage in a skillet until no longer pink. Sprinkle in ¼ cup flour and stir to coat.
  • Add 3 cups milk gradually while stirring. Bring to a gentle boil until thickened into gravy. Season with onion powder, garlic powder, crushed red pepper (optional), salt, and black pepper.
  • Layer the casserole: Spread biscuit pieces across the bottom of a greased 9×13 dish. Pour sausage gravy on top.
  • Whisk 6 eggs with a pinch of salt and pour over the gravy. Sprinkle with 1 cup shredded cheddar cheese.
  • Bake 40–45 minutes until biscuits are cooked through and the top is golden.
  • Serve warm with extra gravy if you’d like.

Ham and Cheese Croissant Bake

This cheesy croissant casserole tastes like your favorite deli sandwich baked into a creamy, indulgent dish. Buttery croissants, smoky ham, and gooey cheese make it perfect for a holiday brunch or meal prep.

Ham and Cheese Croissant Bake Ingredients

  • 6 large croissants, cut into 2-inch pieces
  • 2 cups diced ham (smoked or honey ham)
  • 2 cups shredded Swiss cheese (or Gruyère)
  • 1 cup shredded cheddar cheese
  • 8 large eggs
  • 2 ½ cups whole milk (or half & half)
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • Salt & black pepper to taste
  • Spinach (optional)

Step-by-Step Ham and Cheese Croissant Bake Instructions

  • Preheat the oven to 350°F. Cut 6 croissants into bite-sized pieces.
  • Whisk 8 eggs with 2 ½ cups milk (or half & half), 1 tbsp Dijon mustard, 1 tsp garlic powder, salt, and pepper.
  • Layer the dish: Place croissant pieces in the bottom of a greased 9×13 casserole dish. Add 2 cups diced ham, 2 cups Swiss cheese, and 1 cup cheddar cheese.
  • Pour the egg mixture evenly over the croissants, pressing lightly so they soak it up.
  • Bake uncovered for 40–45 minutes, until golden and set in the center.
  • Optional: Add sautéed spinach or caramelized onions before baking for extra flavor.

Sweet French Toast Casserole

This casserole is like dessert for breakfast—fluffy Hawaiian rolls baked with custard, cinnamon, and a buttery brown sugar caramel base. Finished with powdered sugar, berries, and syrup, it’s the perfect holiday morning dish.

Sweet French Toast Casserole Ingredients

  • 24 pack Hawaiian Sweet Rolls
  • 1 cup brown sugar
  • 1 stick unsalted butter, melted
  • 2 cups whole milk
  • 6 large eggs
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 pinch ground allspice
  • 2 tbsp brown sugar (for custard)
  • Fresh strawberries & blueberries
  • Maple syrup, for serving

Step-by-Step Sweet French Toast Casserole Instructions

  • Preheat the oven to 350°F. Break 24 Hawaiian rolls into small pieces. For best results, use stale bread—or dry fresh bread in the oven at 225°F for 10 minutes.
  • Mix the custard: Whisk 6 eggs with 2 cups whole milk, 2 tsp vanilla extract, 1 tsp cinnamon, 1 pinch allspice, and 2 tbsp brown sugar.
  • Soak the bread: Place bread pieces in a large bowl and pour custard over them. Use your hands to fold until well coated.
  • Prepare the caramel base: Mix 1 stick melted butter with 1 cup brown sugar and spread in the bottom of a greased casserole dish.
  • Assemble & bake: Add the custard-soaked bread on top of the caramel. Bake 45–60 minutes until golden and slightly crisp.
  • Serve warm: Top with powdered sugar, strawberries, blueberries, and a drizzle of maple syrup.

Final Thoughts

These three casseroles cover every breakfast craving:

  • Savory & hearty → Biscuits & Gravy Casserole
  • Cheesy & indulgent → Ham & Cheese Croissant Bake
  • Sweet & cozy → French Toast Casserole

They’re easy, make-ahead friendly, and perfect for meal prep, holiday mornings, or anytime you want a stress-free breakfast that impresses.
