Instructions
Prep Work
First things first, let’s get organized and begin our prep work. I prefer to puree or use a cheese grater for the onion - this way you get the flavor without big chunks of onion in your meatballs.
Measure out everything else and dice your parsley.
Preheat Your Oven: Set it to 375°F (190°C) and line a baking sheet with parchment paper or foil.
Mix the Ingredients: In a large bowl, combine the ground beef, grated onion, Boursin cheese, sour cream, Parmesan cheese, eggs, and bread crumbs.
Season generously with salt, pepper, garlic powder, onion powder, and hamburger seasoning.
Get Your Hands Dirty: Mix everything thoroughly until just combined. Be careful not to over mix, as this can lead to tough meatballs.
Once you get the mixture done, pop this in the fridge for about 30 minutes to allow it some time to chill and bind together.
Shape the Meatballs
Form the Balls: Using your hands, shape the mixture into meatballs about 1.5 inches in diameter.
Place them on the prepared baking sheet, spacing them out to ensure even cooking
Bake: Pop them in the oven for about 25-30 minutes, or until they’re browned and cooked through (internal temperature should reach 160°F).
Measure your your sauce ingredients.
Make the Sauce
Combine Ingredients: While the meatballs are baking, in a medium saucepan over medium heat, whisk together the BBQ sauce, fruit preserves, brown sugar, and honey.
Simmer: Bring the mixture to a gentle simmer, stirring occasionally.
Let it cook for about 5-7 minutes until everything is well combined and slightly thickened.
Glaze the Meatballs
Coat and Serve: Once the meatballs are cooked, remove them from the oven and drizzle the warm sauce over them. Toss gently to coat them evenly.
Garnish (optional): You can sprinkle a bit more Parmesan or some fresh herbs for a pop of color and flavor.
Notes
Serving SuggestionsThese meatballs can be served in various ways:
As an appetizer: Serve them on toothpicks for easy snacking.
With pasta: Toss them with your favorite pasta and extra sauce.
In a sandwich: Stuff them into a hoagie roll with some melted cheese for a hearty meatball sub.
