First things first, let’s get organized and begin our prep work. I prefer to puree or use a cheese grater for the onion – this way you get the flavor without big chunks of onion in your meatballs. Measure out everything else and dice your parsley.

I enjoy the flavor of combining ground beef with wild Italian sausage – but if you’re not into pork, simply use all ground beef. This recipe even works with chicken or turkey too – just don’t use the extra lean stuff.

Preheat Your Oven: Set it to 375°F (190°C) and line a baking sheet with parchment paper or foil.

  • * 1 lb Italian sausage
  • * 1 small onion grated
  • * 5.2 oz Boursin Garlic & Herbs Cheese this will add a creamy texture and amazing flavor
  • * 2 tbsp sour cream for moisture
  • * 1/2 cup grated Parmesan cheese adds a nice salty kick
  • * 2 large eggs to bind everything together
  • * 3 cups bread crumbs for structure
  • * Salt pepper, garlic powder, onion powder, and hamburger seasoning (to taste)

For the Sauce:

  • * 1 cup BBQ sauce your favorite brand
  • * 1/4 cup fruit preserves apricot or peach work beautifully
  • * 2 tbsp brown sugar for extra sweetness
  • * 2-3 tbsp honey for that sticky goodness

    This is the BEST meatball recipe ever! They taste great! I’ve been cooking for more than 50 years and I’ve made a lot of meatballs; this is now my go to recipe. Thx for sharing, Deb

    Thanks for a great recipe Matt! I reduced the amount of italian sausage by half and added ground pork (didn’t want a full on italian flavor profile. Also made a apricot sauce using apricot preserves, some good ground horseradish (not a horseradish sauce) a dash of worchestershire sauce and a bit of water. This makes a great dipping sauce for chicken tenders as well. Of course I always reduce the salt content in any recipe I try due to low sodium.restrictions. So very very good meatball recipe, Thank you again!
