Preheat your oven to 400°F (190°C) and grease a mini muffin tin with cooking spray.
Roll out the pizza dough on a lightly floured surface and cut it into small squares, about 2 inches in size.
Press each square of dough into the wells of the muffin tin, making sure to leave a little overhang.
Spoon a small amount of pizza sauce into each dough-lined well, followed by a sprinkle of mozzarella cheese, Parmesan cheese, chopped pepperoni, and a pinch of Italian seasoning and garlic powder.
Fold the overhanging edges of the dough over the filling to form a little puff.
Bake the pizza puffs in the preheated oven for 12-15 minutes, or until the dough is golden brown and the cheese is melted and bubbly.
Remove the pizza puffs from the oven and let them cool slightly before carefully removing them from the muffin tin.
