This chorizo queso dip is built for game day, parties, and any night when plain cheese dip is not enough. Seasoned ground beef and pork chorizo make it hearty, Rotel adds a little tang and chile flavor, and a four-cheese blend keeps every scoop rich and creamy.
The key is the cheese combination: white and yellow American cheese melt smoothly, Monterey Jack brings extra flavor and stretch, and cream cheese gives the dip body. Serve it hot with tortilla chips and expect the bowl to disappear fast.

Why You’ll Love This Chorizo Queso
- Big, layered flavor: beef, chorizo, Rotel, onion, garlic, and warm spices make this much more than basic queso.
- Extra creamy: American cheese gives the dip a smooth restaurant-style texture.
- Party friendly: the recipe makes a generous batch and stays creamy in a slow cooker on the Warm setting.
- Easy to adjust: add milk for a thinner dip or extra jalapeños for more heat.
The Best Cheese Blend for Smooth Queso
This recipe uses 8 ounces each of white American, yellow American, Monterey Jack, and cream cheese. The American cheeses are important because they melt evenly and help prevent a greasy or broken sauce. Monterey Jack adds a mild, buttery flavor, while cream cheese makes the queso thick enough to cling to every chip.
For the smoothest result, shred the block cheeses yourself. Pre-shredded cheese is coated to prevent clumping, and that coating can make queso less silky.
How to Make Chorizo Queso Dip
1. Brown the beef and chorizo
Cook the ground beef and chorizo together until deeply browned, breaking the meat into small crumbles. Add the onion and let it soften before stirring in the garlic, Rotel, and seasonings. Reserve a little of the meat mixture for the top so the finished bowl looks as good as it tastes.

2. Build the creamy cheese sauce
Lower the heat before adding the milk and heavy cream. Warm the dairy gently—do not let it boil. Melt in the cream cheese first, then add the shredded cheeses a handful at a time. Stir each addition smooth before adding the next.

3. Combine and serve
Fold the seasoned meat mixture into the cheese sauce and adjust the consistency with a splash of milk if needed. Top the dip with the reserved meat, pickled jalapeños, Rotel, and chopped parsley. Serve immediately with sturdy tortilla chips.
Tips for Queso That Stays Creamy
- Keep the heat low. High heat can make dairy separate and cheese turn grainy.
- Add cheese gradually. A handful at a time melts more evenly than adding everything at once.
- Thin it slowly. Queso thickens as it sits, so stir in warm milk one splash at a time.
- Keep it warm. For a party, transfer the dip to a slow cooker on Warm and stir occasionally.
Serving Ideas
Tortilla chips are the classic choice, but this queso is also great over fries, baked potatoes, nachos, or hot dogs. Spoon it over tacos or use it as the cheese layer for loaded beef nachos. For a full game-day spread, pair it with wings, sliders, or other appetizer recipes.

Storage and Reheating
Store leftover chorizo queso in an airtight container in the refrigerator for up to 4 days. Reheat it gently on the stovetop over low heat or in short microwave intervals, stirring often. Add a splash of milk to restore the creamy consistency. Because of the dairy, freezing is not recommended.
Frequently Asked Questions
Can I make chorizo queso in advance?
Yes. Make it up to one day ahead, refrigerate it, and reheat slowly with a little milk. Hold it on Warm in a slow cooker once it is hot.
Is chorizo queso spicy?
This version has a mild-to-medium kick from the chorizo, Rotel, chili powder, and optional jalapeños. Skip the jalapeños for less heat or add fresh serrano peppers and hot Rotel to turn it up.
Why use American cheese in queso?
American cheese contains emulsifying salts that help the sauce stay smooth instead of separating. Combining it with Monterey Jack and cream cheese gives you both reliable texture and rich flavor.

Chorizo Queso Dip with Ground Beef
Ingredients
- 1 lb ground beef preferably 80/20
- 10 oz pork chorizo
- 1 medium yellow onion diced
- 1 tablespoon minced garlic
- 1 can Rotel diced tomatoes with green chiles 10 oz, undrained
- 8 oz white American cheese freshly shredded
- 8 oz yellow American cheese freshly shredded
- 8 oz Monterey Jack cheese freshly shredded
- 8 oz cream cheese cut into cubes
- 2 cups whole milk plus more as needed
- 1 cup heavy cream
- 1 tablespoon all-purpose seasoning
- 2 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon chicken bouillon powder
- Pickled jalapeños for serving (optional)
- Chopped fresh parsley for garnish (optional)
- Tortilla chips for serving
Instructions
- Brown the ground beef and chorizo in a large skillet or Dutch oven over medium-high heat, breaking the meat into small crumbles, until cooked through, 8 to 10 minutes. Drain excess grease if needed.
- Add the diced onion and cook until softened, 4 to 5 minutes. Stir in the garlic and cook for 30 seconds.
- Add the Rotel, all-purpose seasoning, chili powder, cumin, oregano, and chicken bouillon. Cook for 2 to 3 minutes, then reserve a small amount of the meat mixture for garnish.
- Reduce the heat to low. Stir in the whole milk and heavy cream and warm gently without letting the mixture boil.
- Add the cream cheese and stir until melted. Add the white American, yellow American, and Monterey Jack a handful at a time, stirring until smooth before adding more cheese.
- Fold the meat mixture into the queso. If the dip is thicker than you like, stir in a splash of milk until it reaches your preferred consistency.
- Transfer to a serving dish and top with the reserved meat mixture, pickled jalapeños, and parsley. Serve hot with tortilla chips.
