Cowboy Spaghetti Recipe

This cowboy spaghetti is the ultimate one-pot comfort food — loaded with ground beef, crispy bacon, Tex-Mex spices, and a rich, smoky tomato sauce all tossed with spaghetti noodles. It went viral for a reason. This is the kind of meal that feeds the whole crew, takes about 30 minutes, and has everyone coming back for seconds before you even sit down. It's also one of the most requested recipes on my YouTube channel — and for good reason. If you love bold, hearty, no-fuss dinners, this one's for you.

I've been making some version of cowboy spaghetti since way before it blew up on social media, and I've dialed this recipe in to hit just right — beefy, slightly smoky, a little bit of heat, and rich enough to feel like a hug on a plate. We're not cutting corners with canned sauce here. Everything cooks in one pot, which means the pasta absorbs all that flavor from the meat, the spices, and the tomatoes as it simmers. Trust me on this one — once you make it from scratch, you'll never go back. Let's dive in!

What Is Cowboy Spaghetti?

Cowboy spaghetti is a hearty, one-pot pasta dish that blends Italian spaghetti with Tex-Mex and Southern flavors. Think of it as a cross between a meaty pasta and a chili — ground beef and bacon form the protein base, seasoned with chili powder, cumin, and paprika, then simmered in a tomato sauce and tossed with noodles. It's the kind of dish that ranch hands would make over a campfire with whatever they had on hand, which is how it got its name. Some versions add beans, some go heavy on the cheese — there's no single "right" way to do it. That's the beauty of it. My version leans into the smoky, spicy, cheesy direction because that's where the flavor lives. It's become one of our favorite weeknight dinners at home — quick to make, feeds a crowd, and the leftovers are just as good the next day.

Ingredients

For the Meat Base

  • 1 lb ground beef (80/20 — you want that fat for flavor)
  • 6 slices thick-cut bacon, chopped
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 bell pepper, diced (any color works)

For the Sauce & Seasoning

  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon cayenne pepper (optional — for heat)
  • Salt and black pepper to taste

For the Pasta & Toppings

  • 12 oz spaghetti noodles (broken in half to fit the pot)
  • 1 cup shredded cheddar cheese
  • Fresh cilantro or green onions for garnish
  • Sour cream (optional)

Equipment

Level up the seasoning with my signature AP Seasoning — it adds that extra layer of flavor that takes this from good to unreal.

Step-by-Step Instructions

Step 1: Cook the Bacon

Start by rendering that bacon in your Dutch oven over medium heat. We want it crispy — that bacon fat is going to be the flavor foundation for everything else. Once it's golden and crisp, pull the bacon out and set it aside. Leave all that glorious bacon grease right there in the pot.

Step 2: Brown the Beef

Add the ground beef to that hot bacon fat and break it up with a wooden spoon. Season with salt and pepper right away. Cook until it's nicely browned and there's no pink left — about 5-6 minutes. The beef picks up all that smoky bacon flavor as it cooks, which is exactly what we want. Don't drain the fat — it's part of the recipe.

Step 3: Build the Aromatics

Add the diced onion, bell pepper, and garlic to the pot. Cook for about 3-4 minutes until the onions are soft and translucent. Here we have chili powder, cumin, smoked paprika, garlic powder, and cayenne — add all your spices now and stir everything together. Cooking the spices in the fat for a minute blooms them, which means they release way more flavor. You'll smell it immediately — your whole kitchen is about to smell incredible. This is the step most people skip or rush through, and it's the difference between flat-tasting spaghetti and something that actually has depth.

Step 4: Add the Sauce & Pasta

Pour in the tomato sauce, diced tomatoes, and beef broth. Stir to combine everything and bring it to a boil. Now add the spaghetti noodles — break them in half so they fit in the pot. Push them down into the liquid so they're fully submerged. Reduce the heat to medium-low, cover, and let it simmer for about 12-15 minutes, stirring every few minutes so the pasta doesn't stick. The noodles are going to absorb all that beefy, smoky, tomatoey goodness as they cook. Taste as you go and adjust the seasoning as needed. If the sauce gets too thick before the pasta is done, add another splash of broth. You want it saucy — the noodles will continue absorbing liquid even after you take it off the heat.

Step 5: Finish & Serve

Once the pasta is cooked and the sauce has thickened up, toss in the crispy bacon you set aside earlier. Give it a good stir, then pile on the shredded cheddar right on top. Cover the pot for about a minute to let the cheese melt — you want it gooey and stretchy. Top with fresh cilantro or sliced green onions, and a dollop of sour cream if you're feeling it. Boom, you've got cowboy spaghetti!

Variations

One of the best things about cowboy spaghetti is how easy it is to switch up. If you want a leaner version, swap the ground beef for ground turkey — just add an extra tablespoon of oil since turkey doesn't have as much fat. Want more heat? Double the cayenne and add a diced jalapeño when you cook the onions. For a cheese-loaded version, stir in cream cheese along with the shredded cheddar at the end — it makes the sauce incredibly creamy and rich. You can also throw in a can of black beans or corn for a Southwestern twist. I've made it all these ways and they all hit different. At the restaurant, I'll sometimes finish it with a drizzle of truffle oil and shaved Parmesan — sounds fancy, but it works with the smoky, beefy base. Just make sure you're tasting as you go and adjusting the seasoning.

What to Serve with Cowboy Spaghetti

This is a big, bold dish, so keep the sides simple. A fresh side salad with ranch dressing is my go-to — the cool, crunchy greens cut right through the richness. Garlic bread or Texas toast is another no-brainer for soaking up any extra sauce. Grilled corn on the cob keeps the whole meal feeling like a backyard cookout. If you want to round out a game day spread, pair this with my cheesesteak sliders and you've got the ultimate lineup. My homemade chili dogs are another hearty comfort food option. My 5 cheese mac and cheese is another crowd-pleaser that goes perfectly alongside. And if you're looking for more ground beef recipes, our meatloaf recipe is always a hit.

Frequently Asked Questions

What's the difference between cowboy spaghetti and regular spaghetti?

Regular spaghetti is Italian — marinara or bolognese with herbs like basil and oregano. Cowboy spaghetti goes full Tex-Mex with bacon, chili powder, cumin, and cayenne. It's smokier, spicier, and heartier. Think of it as spaghetti that traded a Vespa for a pickup truck. The protein is typically ground beef and bacon instead of Italian sausage, and the sauce has more of a chili-style flavor profile.

Can I make cowboy spaghetti ahead?

Absolutely. Make the whole thing, let it cool, and store it in an airtight container in the fridge for up to 3 days. When you reheat it, add a splash of beef broth to loosen the sauce back up — the pasta absorbs liquid as it sits. Microwave works fine, but stovetop over medium-low heat is better because you can control the consistency.

Can I freeze cowboy spaghetti?

Yes — it freezes great for up to 3 months. Portion it into freezer-safe containers, let it cool completely first, then freeze. Thaw overnight in the fridge and reheat on the stovetop with a little extra broth. The pasta texture holds up surprisingly well because it's cooked in the sauce rather than boiled separately.

What meat is best for cowboy spaghetti?

80/20 ground beef is the move. The 20% fat keeps the meat juicy and adds richness to the sauce. Paired with thick-cut bacon, you get a double layer of meaty, smoky flavor. Ground turkey works if you're watching fat intake, but you'll want to add a bit more oil and seasoning to compensate. Some people use ground sausage for extra kick — that works too.

If you love this Cajun-style pasta, my Louisiana chicken pasta takes that same spicy cream sauce energy and pairs it with parmesan-crusted chicken — another pasta night winner.
