First Things First…

First things first, let’s assemble our ingredients. Today we are taking a bit of an old-school approach, which actually happens to produce my favorite version of peach cobbler. The pie crust stuff is cool, but it really can’t compete with this recipe!

One of the secret ingredients here is the lemon zest. Don’t skip it!

Mr. Make It Happen

All-Purpose Flour

For the cobbler topping, we are going to mix together all-purpose flour, baking powder, sugar, cream, cinnamon, nutmeg, and a pinch of sugar.

Break out your whisk and mix until thoroughly combined.

Next, grab your 9×11 casserole dish and melt 6 tbsps of butter. Pour this evenly on the bottom of your casserole dish.

Next, add your batter on to the melted butter and spread it out into an even layer.

Now it’s time to get started on your peaches. We are using 2 cans of peaches in syrup along with white and brown sugar, cinnamon and nutmeg, lemon zest, and a pinch of salt. You can add a little vanilla extract here as well if you prefer.

Simmer this mixture until it thickens up a bit. (About 10-15 minutes). You can also use a slurry (¼ cup of water and 2 tbsps cornstarch) to thicken this up as well.

Once you have the flavor right where you want it, add the peaches on to the batter. We are going to bake this at 375 degrees for 40-50 minutes.

The crust or batter will rise to the top as you see below and form that old-school peach cobbler topping we all love. Serve this up with some ice cream and optionally a little homemade caramel sauce.

Ingredients

  

  • 2 cans of peaches in syrup
  • ¾ cup white sugar
  • ½ cup brown sugar
  • 1 pinch of salt
  • 1 tablespoon cinnamon more to taste
  • 1 lemon zested
  • 1 teaspoon nutmeg

Batter:

  • 6 tbsps butter
  • 2 taps baking powder
  • 1 cup flour
  • 1 cup white sugar
  • ½ teaspoon salt
  • ¾ cup milk
  • Cinnamon and nutmeg

Caramel:

  • 1 cup sugar
  • 6 tablespoon butter room temperature
  • ½ cup cream
  • 1 teaspoon salt

Instructions

    Peaches were on sale at the store so I bought a bunch. Can you advise how to use the fresh? Do I peel them first? Do I need to make a syrup?

      no syrup needs to be made. that is what the sugar mix is for. you heat it up to evaporate the water and what is left when simmering thickens up to form the syrup. if you are using a water heavy fruit than you would need to heat it longer or use the cornstarch water mixture to thicken. hope this helps
