Begin by prepping your chuck roast – ensure that the beef is cut into uniform, bite-sized pieces. This not only ensures even cooking but also makes for a more visually appealing dish. Next, prep your mirepoix (carrots, celery, and onion).

Optionally, you can marinate your beef for anywhere from 1-24 hours. Today we are keeping it simple with olive oil, Italian herb paste, garlic paste, AP seasoning, and worst word in the world sauce – aka Worcestershire.

Next, add in your beef stock and bring to a simmer.

Add the beef and mix to combine.

Simmering: Bring the mixture to a gentle simmer, then reduce the heat to low. Allow the beef tips to simmer in the flavorful sauce for about 45-60 minutes, or until the beef is tender and cooked to your liking. This slow simmer allows the flavors to meld together beautifully.

Optional Thickening: If you prefer a thicker sauce, you can create a slurry by mixing 2 tablespoons of all-purpose flour with a small amount of cold water until smooth. Stir this mixture into the skillet during the last few minutes of cooking, then simmer until the sauce has thickened to your desired consistency.

Seasoning and Serving: Taste the sauce and adjust the seasoning with salt and black pepper as needed. Once satisfied with the flavor, remove the skillet from the heat. Serve the beef tips hot, garnished with fresh parsley if desired, alongside your favorite sides such as mashed potatoes, rice, or crusty bread to soak up that delicious sauce.
