  • 4–6 bone-in, skin-on chicken thighs
  • Salt (for seasoning skin)
  • 1–2 tbsp avocado oil (or olive oil)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 tbsp tomato paste
  • 2 cups rice
  • 3–4 cups chicken broth
  • 1 tsp adobo seasoning
  • 1 sazon packet (reserved for rice)
  • 1 tsp chicken bouillon powder
  • 1 tsp dried oregano
  • ¼ tsp cayenne pepper (adjust for heat)

RICE COOKING

Cook Rice To Your Liking

Since people use many different types of rice, always cook it according to the bag or box instructions. Be sure to cook your rice before you begin cooking your chicken, so you can be prepared to toast it with your veggies!

Step 1: Prepare and Season the Chicken

  • Clean up chicken thighs by trimming excess skin or fat.
  • Gently separate skin from meat using your fingers and season underneath with adobo for maximum flavor absorption.
  • Sprinkle the outside of the skin with just salt and leave the sazon packet for the rice— this ensures golden, crispy skin.

Step 2: Sear the Chicken

  • Heat a large skillet over medium-high heat with avocado oil.
  • Place chicken thighs skin-side down first and sear until golden brown and crispy.
  • Flip and cook the other side for 3–4 minutes until nicely browned.
  • Once you have the color you’re looking for, remove the chicken from the skillet and set aside.

Step 3: Cook the Veggies

  • In the same skillet, add diced onion and bell pepper.
  • Sauté over medium heat until softened and fragrant.

Step 4: Build Flavor with Seasonings

  • Stir in 2 tbsp of tomato paste and let it cook for 1–2 minutes.
  • Add sazon, adobo, chicken bouillon, oregano, and cayenne pepper.
  • Mix well, coating the veggies with the spices.

Step 5: Toast the Rice

  • Add rice directly to the skillet and stir to coat in the spice-veggie mixture.
  • Toast for 2–3 minutes to lock in flavor before adding chicken broth.
  • You can also add in things like oregano, cayenne pepper, smoked paprika, etc., for that extra flavor.

  • 1.5 tsps Dried Oregano or italian seasoning
  • 2 cups Long Grain White Rice sub cauliflower rice for keto
  • 1 tbsp Better than Bouillon Chicken Base
  • salt, pepper, garlic, onion powder, cayenne, smoked paprika,adobo sazon is optional but recommended
  • All-Purpose Seasoning to taste

Wet Ingredients

  • Avocado Oil
  • 4 cups Chicken Broth/Stock
  • 2 tbsps Butter

  • 3 cloves of Garlic
  • Fresh chopped parsley
