Set the steak to the side while you prep the remainder of your veggies.

Step 2: Blanch the Asparagus

I like to blanch the asparagus before adding it to the sauce to ensure they get nice and tender but maintain their vibrant color.

To do this, bring a small pot of salted water to a boil. Toss in the asparagus pieces for 2-3 minutes until tender but still bright green. Drain and place in ice water to stop the cooking. Set aside.

Heat 2 tablespoon avocado oil (avocado oil has a higher smoke point) in a large skillet over medium-high heat. Sear the steak bites for 1-2 minutes per side until browned but not overcooked. Remove and set aside.

In the same skillet, add 3 tablespoon butter, onions, mushrooms, parsley, and we are also going to add… drum roll please… GARLIC, and lots of it.

  • ½ teaspoon beef bouillon powder
  • 1 – 1.5 cups red wine dry
  • ½ stick butter
  • 1-2 tbsps fresh diced rosemary
  • 1 teaspoon worcesertshire sauce
  • red pepper flakes
  • All-Purpose Seasoning
  • ½ cup beef broth

Instructions
