Chef Tips for the Best Chicken Piccata
Pound the chicken thin
Thin cutlets cook faster and stay tender.
Use fresh lemon juice
Bottled lemon juice won’t give you the same bright flavor.
Don’t skip the pan drippings
Those browned bits from searing the chicken are where a lot of the flavor lives.
Finish with butter
This emulsifies the sauce and gives it that classic silky texture.
Prepare the Chicken
Slice the chicken breasts horizontally to create thin cutlets.

Produce Preparation
Prep your produce.
Today we just need some shallots, fresh garlic, parsley, and capers.

Sear the Chicken
Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
Add the chicken cutlets and cook for 3–4 minutes per side until golden brown and cooked through. Remove the chicken and set it aside.

2 pc. Hybrid All-Purpose Skillet

Build the Piccata Sauce
Reduce the heat to medium.
Add garlic and cook for about 30 seconds until fragrant.
Pour in the white wine and scrape up the browned bits from the pan.

Let the wine reduce for 2–3 minutes, then add:
• chicken broth
• lemon juice
• capers
• lemon zest
Simmer for about 3 minutes.
Finish the Sauce
Stir in the remaining butter and whisk until the sauce becomes glossy and slightly thickened.
Taste and adjust seasoning if needed.
Bring It All Together
Return the chicken to the pan and spoon the sauce over the top.
