Add parsley, parmesan, lemon zest, AP Seasoning or salt and pepper and olive oil if needed to thin the sauce a bit. Cook the chicken about 75% of the way through and then add the garlic parm during the last few minutes of cooking (preserve some for the final plate)

Chicken should reach at least 165 degrees internal temp before serving.

Equipment

  • 1 Mr. Make It Happen Skillet or preferred cooking skillet
  • 2 Medium Mixing Bowls
  • 1 pack of skewers
  • 1 Baking Sheet w/ Wire Rack

Ingredients 

  • 1.5 lbs chicken breast
  • 1/4 cup olive oil
  • 1 head roasted garlic
  • 1 stick of butter
  • 2 tbsps parsley
  • AP and Lemon Bae
  • Chicken bouillon powder
  • Smoked paprika
  • 1 tbsp garlic paste
  • Lemon zest

Instructions 

Prepare the Marinade:

  • In a bowl, combine olive oil, minced garlic, grated Parmesan cheese, dried oregano, dried basil, salt, pepper, and lemon juice. Mix well until everything is thoroughly combined.

Marinate the Chicken:

  • Place the chicken cubes in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight, to let the flavors meld.

Assemble the Kebabs:

  • If using wooden skewers, thread the marinated chicken cubes onto the skewers, leaving a small space between each piece to ensure even cooking. If using metal skewers, simply thread the chicken onto them.

Grill the Kebabs:

  • Preheat the grill to medium-high heat. If cooking these on the grill, fire up the grill to 400 degrees. (If you’re using the oven, preheat the oven to 400).
    Place the chicken kebabs on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is fully cooked through and has a nice charred appearance.
    Chicken should reach at least 165 degrees internal temp before serving.
